Northern Fried Comfort

As we prepare for up to 6 more inches of snow followed by our first arctic blast of below zero temperatures my mind turns to hunkering down to a nice hot fire in the fireplace and tasty warm food in my belly.

There’s plenty of wood in the wood racks.

My almost world famous Coca-Cola pot roast is in the oven. (See Ron’s Rambling December 11, 2020 post Legalized Pot Roast.)

However, a great pot roast takes hours to cook and I’m hungry now. What to do, what to do?

I’ve got it! Northern Fried Cabbage with Spicy Sausage and Bacon. I know, I know. Fried cabbage is a southern thing. Hey, if Wisconsin can claim Brett Favre as our own, we can also claim fried cabbage as our own.

Here’s R Dub’s version of this southern delight.

Ingredients:

1/4 lb chopped bacon

1 small head green cabbage chopped

1 medium onion chopped

1 lb Spicy Sausage

15 oz crushed tomato

1 tbs Pork Rub

1 tsp Seasoned Salt

3 tbs Avocado Oil

Directions:

Fry sausage and cut into slices

Fry bacon until crispy

Add 2 tbs of avocado oil

Saute chopped onion until caramelized

Add 1 tbs avocado oil

Add chopped cabbage

Season with pork rub and seasoned salt

Saute until cabbage is al dente

Stir in sliced sausage

Stir in crushed tomato and heat through.

Enjoy!
